Food and Nutrition,
BACHELOR OF SCIENCE

About the Program

Students of Food and Nutrition explore the effects of food on human health and the body, as well as the social, psychological, environmental and technological factors that influence health. Academic requirements include course work in nutrition, food science and physiology, which provide a solid foundation in the fundamentals of food and nutrition. Also, as a major firmly based in the sciences, Food and Nutrition requires course work in biological and chemical sciences, mathematics and statistics.

Concentrations

Depending on the interests of the individual, students in the Food and Nutrition major can supplement basic curriculum with additional courses in related areas. The program offers concentrations in business, exercise science and pre-medicine, as well as the opportunity to fulfill the American Dietetic Association (ADA) requirements for becoming a registered dietician (RD) through completion of the Didactic Program in Dietetics (DPD) coursework. For example, students interested in consumer-related employment in the field of nutrition may take courses emphasizing behavioral science and business, while students interested in fitness or personal training may take courses in exercise science. For those intending to apply to medical school or for an advanced degree, the pre-medicine emphasis will meet the requirements of most medical and graduate schools. Completion of the Food and Nutrition concentrations with the DPD establishes eligibility for a post-baccalaureate dietetic internship.  There are over 260 dietetic internships accredited by the ADA throughout the country.  Following completion of the DPD coursework and a dietetic internship accredited by the ADA, students will be eligible to take the national registration examination to become an RD.  Jobs involving nutrition counseling, assessment of nutritional status, nutrient needs calculations, and development and management of certain types of nutrition programs require the credentials of an RD. Consult the appropriate links on the department website for more information on the supplementary curricula for each Food and Nutrition concentration.

Job Opportunities

Nutrition is a rapidly growing field due to expanding knowledge in the science of nutrition, as well as increasing public interest in the relationship between diet and health. Upon completion of the Food and Nutrition program, students have various career options depending on which emphasis area they selected and whether or not they completed the Didactic Program in Dietetics. Career opportunities exist in the areas of business, industry, education and research, and many students with Food and Nutrition degrees go on to pursue advanced degrees in medicine or allied health fields.
